M E A T | Siow Bak


Who doesn't like a good roast meat. This is a 'must have' during CNY. Bring out the carnivore in you!


Siow Bak

Serves 10 

2 Kg Pork Belly

3 Tbsp Salt

2 Tbsp White Pepper

2 Tbsp White Vinegar

2 Tbsp Fermented Bean Curd (Nam Yue)

1 Tbsp Chinese Five Spice Powder


Blanch pork belly in hot boiling water for 10 minutes. Drain and pat dry.

Use fork to poke hole all over the pork belly skin, the more holes the crisper the skin. There is a special tool from kitchen specialty shop for this task, as it may take a while if using fork.

Lightly slit meat part to better penetration of marinade. Marinade meat side only with 2 Tbsp salt, white pepper, fermented bean curd and chinese five spice powder. For the skin side, rub in 1 Tbsp of salt.

Marinade overnight in the fridge.

The following day, before roasting, pat dry the skin part before putting in oven.

Bake in a preheated oven at 180⁰C for 1 hour. Brush the meat with white vinegar.

Turn to grill mode and increase temperature to 220⁰C, continue to grill for another 15 minutes. The skin might be a little charred. Scrape the charred part with a paring knife.

Let it rest before chopping into strips.

C N Y | Pineapple Tart


There will be no CNY without pineapple tart. Really addictive and worth the effort. 100% homemade with love.


Pineapple Tart

Serves 5 small canister

Pastry

580g Flour

120g Condense Milk

400g Butter

3 Eggs Yolk (reserve 2 Tsp for glazing)


Cream butter and condense milk till pale and airy. Add egg yolk. Mix well.

Add in flour by batches till it becomes a soft dough.

Rest and chill in the fridge for about 10-15 minutes.


Pineapple Filing
*Prepare a day before

2 Pineapple

2 Cups Sugar

1 Stick Cinnamon

3 Cloves


Cut and puree the pineapple. 

Cook pineapple with sugar, cinnamon, clove on medium high heat till thicken (jam texture). Stir in occasionally to avoid burn.

Cool down, remove the spice, and keep in fridge till ready to use.


To Assemble

Roll pineapple filling into small balls.

Use any pineapple cookie mold of choice to shape.

Brush with egg wash.

Bake in a preheated oven at 160⁰C for 20 minutes.

Cool down in cooling rack before storing.

Moving On


We stayed at Paragon Residence for almost a year now. It was a great place. Good location, nice view, low density and good facility. The only thing is, too far from the children's school.

Moving forward, we will move nearer to the school, as we have decided that Tiny will start school next year and somewhere nearby jehjeh and gorgor's school. Here we go again!

Looking back, we have moved from Petaling Jaya to Bangkok, Bangkok to Shah Alam, Shah Alam to Johor, Johor Bahru town to Mount Austin. With 3 Children. Within 10 years. Can we settle somewhere, daddy?

X M A S | Barbecue Galore


One rainy day, after Christmas, after watching TLC cooking show, was craving for barbecue. 

Decided to cook this later that evening. Mediterranean/Tex-Mex style.

It was still rainy, so some of it we grill it on the stove top. 😕.


BBQ Kebabs Skewers

Serves 6-8

500g Beef (cube)

500g Salmon (cube)

300g Bacon

250g Mushroom

3 Bell Pepper (tricolour)

2 Cucumber

2 Onion

3 Bell Pepper (tricolour)

½ Pineapple

¼ Cup Soy Sauce

5 Tbsp Honey

5 Tbsp Olive Oil

1 Tbsp Brown Sugar

1 Tsp Salt and Pepper


Marinade meat and fish (except bacon) with soy sauce, honey, olive oil, brown sugar, salt and pepper for at least 2 hours.

Soak the bamboo skewer for 20 minutes prior grilling to prevent burn. Assemble the kebab skewer.

Grill for 5-10 minutes till done.

Mediterranean/Tex-Mex Night

Watermelon Feta Cheese Salad

Serves 6

½ Watermelon (cube)

¼ Cup Feta Cheese

1 Cucumber (slice)

1 Onion (slice)

2 Stalks Cilantro

2 Stalks Mint

2 Tbsp Olive Oil

2 Tbsp Lime Juice

1 Tbsp Honey

1 Tbsp Balsamic Vinegar

1 Tsp Salt and Pepper


Whisk olive oil, lime juice, honey, balsamic vinegar, salt and pepper . Set aside.

Place watermelon, cucumber, onion, feta cheese, cilantro, mint in a large salad bowl. 

Dress when ready to eat.

Refreshing

Hummus With Tortilla Chips


1 Can Chickpeas

¼ Cup Tahini/Peanut Butter

2 Cloves Garlic

5 Tbsp Olive Oil

5 Tbsp Lemon Juice

2 Tbsp Water

1 Tsp Salt and Paprika


Puree all ingredients till smooth. Season with salt.

Cut tortilla into small square or triangle. Bake in preheated oven at 180⁰C for 5-10 minutes till crisp.

Drizzle hummus with some olive oil and paprika before serving.

Mango Tomato Salsa


1 Mango (cube)

1 Tomato (cube)

1 Onion (mince)

2 Stalks Cilantro

5 Tbsp Lemon Juice

1 Tsp Salt and Pepper

1 Tsp Sugar


Combine all ingredients well.

Rest and chill in fridge for 30 minutes before serving.
